Caramelized Brussels Sprouts with Bacon and Pecans

  1. 4 pounds (2 kg) Brussels sprouts
  2. 1 package Greenfield Bacon, chopped
  3. ½ cup (125 ml) unsalted butter
  4. 1 shallot, finely minced
  5. 2 tbsp (30 ml) white sugar
  6. ¼ cup (60 ml) red wine vinegar
  7. ½ cup (125 ml) coarsely chopped pecans
  8. salt and pepper, to taste
  1. Place Brussels sprouts in boiling salted water. Cook for 5 minutes or until Brussels sprouts are tender yet crisp.
  2. In a deep skillet on medium-high heat, add the bacon and cook until crispy (about 5 minutes). Remove the bacon from the pan and set aside. Reserve half the bacon fat, discarding the other half. Add the butter, Brussels sprouts and shallot to the skillet and cook for 5 minutes, or until sprouts begin to caramelize.
  3. Add sugar and vinegar, and cook for another 3 to 4 minutes. Add the bacon back to the skillet along with chopped pecans, and cook for 1 minute. Season with salt and pepper and serve.
