Bacon-wrapped Cod with Creamed Spinach

Bacon-wrapped Cod
  1. 4 portions fresh cod (5 oz. each)
  2. Sea salt
  3. Freshly ground black pepper
  4. 1 package Greenfield bacon
  5. 1½ tbsp (22 ml) extra-virgin olive oil
Creamed Spinach
  1. 1 tbsp (15 ml) butter
  2. 1 shallot, minced
  3. 1 garlic clove, minced
  4. 1 cup (250 ml) 35% cream
  5. 3 cups (750 ml) baby spinach, washed
  6. Pinch of nutmeg
  7. Salt and pepper, to taste
  1. Preheat oven to 375°F (190°C).
  2. Lightly season the cod all over with salt and pepper. Place the bacon on a cutting board and wrap two pieces of bacon around each piece of cod, securing the bacon with a skewer or toothpick. The cod should be completely covered with the bacon except for the corners.
  3. In a heavy-bottomed ovenproof skillet, heat olive oil over medium heat. When the oil is hot, add the fish and brown it on all sides, about 4 minutes per side. Place the pan into the oven and cook for 6 to 8 minutes. Remove from heat.
  4. Creamed Spinach: In a heavy-bottom pot on medium-low heat, add butter, shallots and garlic and cook for 2 minutes. Add the cream, and cook for 5 minutes or until it has reduced by half. Add the spinach and stir. Cook for 3-5 minutes or until wilted. Season with nutmeg, salt and pepper.
  5. Serve with bacon-wrapped cod.
