Ingredients
  1. 1 1/2 lbs. Greenfield Ground pork
  2. Produce
  3. 10 Basil, leaves
  4. 3 tbsp (45 mL) Cilantro
  5. 2 cloves Garlic
  6. 1 tbsp (15 mL) Ginger, minced
  7. 5 Green onion
  8. 1 head Iceberg lettuce or romaine lettuce
  9. 1 Lime
  10. 5 Mint, leaves
Slaw
  1. 2 1/3 tbsp (35 mL) Chili sweet sauce
  2. 1 1/2 (7 mL) tsp Fish sauce
  3. 2 tbsp (30 mL) Lime juice
  4. 1/2 tsp (2 mL) Sriracha
  5. 2 cup (500 mL) shredded cabbage
  6. 1/2 cup (125 mL) kimchi, chopped fine
  7. 3/4 cup (175 mL) mayo
  8. 1 tsp (5 mL) Salt
  9. 1/4 cup (75 mL) Rice vinegar
Instructions
  1. Preheat your oven to 400 degrees
  2. For the meatballs, mix all the ingredients except the sweet chili sauce in a medium bowl with your hands until evenly combined (the pork, scallions, ginger, garlic, fish sauce, sriracha, salt, and lime juice)
  3. Grease a baking tray with vegetable oil.
  4. Using about 1 heaping tablespoon of meat mixture each, form meatballs and place them on the baking sheet.
  5. Bake the meatballs for 15 minutes or until they are fully cooked through in the middle, flipping once half way through the cooking time.
  6. Meanwhile, in a medium bowl, combine all the ingredients for the slaw, toss well to combine.
  7. Set aside until the meatballs are finished baking
  8. When the meatballs are done, transfer them to a bowl and toss with 1-2 tablespoons sweet chili sauce (they should just have a very light coating)
  9. To assemble, start with a lettuce cup, spoon in a pile of slaw, and top with three meatballs
  10. Top with a little extra cilantro and an extra squeeze of lime juice.
