Ravioli with Bacon Dill White Wine Sauce

Ingredients
  1. 1 Pkg fresh cheese stuffed ravioli
  2. 1 tbsp (15 mL) clarified butter
  3. 1 pkg Green Field Bacon, diced
  4. 1 cup (250 mL), cherry tomatoes, halved
  5. 1 tsp (5 mL) finely diced garlic
  6. 1 shallot, thinly sliced
  7. ¾ (175 mL) cup white wine
  8. 3 oz heavy cream
  9. 1 tbsp (15 mL) dill, chopped
  10. Cooked pasta, for serving
  11. 1/4 cup (60 mL) finely grated Parmesan, plus more for serving
  12. Salt and Pepper to taste
Instructions
  1. Heat the butter in a large saute pan.
  2. Add the bacon and sauté until slightly brown. Strain off the excess bacon fat.
  3. Add the shallots, garlic and sauté briefly, and then deglaze with the wine.
  4. Reduce the wine by half, and then add the heavy cream and cherry tomatoes.
  5. Reduce this by one third, and then toss in your cooked ravioli.
  6. Heat the pasta through and add the Parmesan, pepper, salt, dill and toss.
  7. Pour into bowls and add more Parmesan cheese (as much as you like).
