Leek and Smoked Sausage Stew

Ingredients
  1. 1 tbsp (15 mL) Olive oil
  2. 1 bunch leeks, white part only, cut into 2 inch rounds
  3. 1 carrot, diced small
  4. 1 celery stalk, diced small
  5. 3 Cloves garlic, minced
  6. 2 Sprigs rosemary, finely chopped
  7. ½ cup sour cream
  8. 1 (19 oz/540 mL) Can White kidney beans, drained
  9. 1 ¼ cup stale bread, torn (baguette preferred or sour dough)
  10. 1 Package Greenfield Smoked Sausages, sliced in 1 ½” rounds
  11. 1 ½ cup chicken stock
  12. Salt and pepper
Instructions
  1. HEAT oil in a large skillet over medium heat, add leeks, carrots and celery and cook for 5 minutes, add garlic and cook for 1 more minute. Add the sausages and cook for another 3-4 minutes.
  2. Add the chicken stock and rosemary, bring to a boil.
  3. Stir in beans, bread and season with salt and pepper.
  4. Simmer for 8-10 minutes, or until the bread dissolves and stew thickens. Stir in sour cream and serve.
