Bacon Kale and Caesar Salad

Ingredients
  1. 1 Package of Green Field bacon, cooked and chopped
  2. 1 cup low fat mayonnaise
  3. ¼ cup greek yogurt or sour cream
  4. 4 cloves garlic, smashed
  5. Pinch of crushed red pepper
  6. 1½ cup garlic croutons
  7. 1/2 cup grated parmesan
  8. Zest and juice of 1-2 lemon
  9. 1 tablespoon Dijon mustard
  10. 2 to 3 anchovy fillets
  11. 2 shakes Worcestershire sauce
  12. Kosher salt
  13. 1 bunch of kale, tough stems removed, cut into ribbons
Instructions
  1. In the bowl of a food processor, combine half of the cooked bacon, parmesan, lemon zest and juice, garlic, Dijon, anchovies, and worcestershire.
  2. Puree until the mixture is smooth, 30 to 40 seconds.
  3. With the machine running, add mayonnaise and yogurt.
  4. Let the processor continue to run for another 10 to 15 seconds.
  5. Taste and season with salt if needed.
  6. In a large bowl, toss the kale with the croutons and two-thirds of the dressing.
  7. Let the kale sit for 3 to 4 minutes to soften.
  8. Taste, add the remaining dressing and remaining bacon, and adjust the seasoning if needed.
